This process is essential for creating the unique golden-brown surface, distinctive flavor, and crisp texture that characterize alkaline biscuits.
Alkaline Water Pool Immersion
The raw biscuit pieces pass through a food-grade alkaline water pool containing a controlled concentration of sodium carbonate (Na₂CO₃) or food-grade sodium hydroxide (NaOH) solution.
The temperature of the solution is carefully monitored to ensure even dipping.
The dipping time is precisely controlled (usually a few seconds) to guarantee consistent alkaline coating without affecting biscuit integrity.
