The gas tunnel oven generates heat by burning combustible gases such as natural gas. The gas is mixed with an appropriate amount of air in the burner and then ignited. During the combustion process, a large amount of thermal energy is released. The design of the burner usually ensures that the gas is fully burned to improve energy utilization efficiency and reduce pollutant emissions.
Convection:
The high-temperature gas generated by combustion forms a hot air current, which flows rapidly in the tunnel oven. When the hot air current contacts the biscuits moving on the conveyor belt, heat is transferred to the biscuits through convection. The hot air current wraps around the biscuits, causing the surface of the biscuits to heat up rapidly.
Since the hot air current is continuously circulating in the tunnel oven, it can ensure that all parts of the biscuits are evenly affected by convection, thus achieving uniform baking.
Conduction:
The biscuits are placed on the conveyor belt. The conveyor belt is usually made of metal materials and has good thermal conductivity. When the hot air current heats the conveyor belt, heat is conducted to the bottom of the biscuits through the conveyor belt.
In addition, there will also be a certain degree of heat conduction between the biscuits and the surrounding metal parts (such as the furnace wall, etc.), further promoting the uniform heating of the biscuits.
Radiation:
The high temperature generated by gas combustion will emit energy in the form of radiation. Although radiation heat transfer accounts for a relatively small proportion compared to convection and conduction in the gas tunnel oven, it still plays a certain role in baking biscuits.
Radiant heat can directly penetrate the surface of the biscuits, gradually increasing the internal temperature of the biscuits, which helps to speed up the baking speed of the biscuits and improve the baking effect.
The tunnel oven is equipped with a continuously operating conveying system, generally a conveyor belt. The conveyor belt is driven by a motor and conveys biscuits from the entrance to the exit of the tunnel oven at a stable speed. During the conveying process, the biscuits are continuously heated by the hot air current to complete the baking process.
The speed of the conveyor belt can be adjusted according to the type, thickness, and baking requirements of the biscuits. If the conveyor belt speed is too fast, the biscuits may be inadequately baked; if the speed is too slow, it may lead to over-baking of the biscuits or reduced production efficiency.
To ensure the quality and stability of biscuit baking, the gas tunnel oven is equipped with a temperature control system.
Temperature sensor: Installed at different positions in the tunnel oven to monitor the temperature changes in the oven in real time. The temperature sensor transmits the detected temperature signal to the controller.
Controller: Compares and analyzes the set baking temperature and the actually monitored temperature value. When the actual temperature deviates from the set temperature, the controller will issue instructions.
Adjusting device: According to the instructions of the controller, adjust the gas supply, the power of the burner, or the speed of the conveying system, etc., to achieve precise control of the temperature in the tunnel oven. For example, if the temperature is too high, the gas supply can be reduced or the burner power can be lowered; if the temperature is too low, the gas supply can be increased or the burner power can be increased. At the same time, the baking time of biscuits in the oven can also be indirectly controlled by adjusting the speed of the conveyor belt to achieve the required baking temperature.
